What stats should I be looking from when selecting materials for a fishing pole? There's not many things that give fishing rating, so should I be going for melee damage or something?

Melee damage and critical damage affect how much damage you do per tick when fishing. Fishing rating affects how many fish you get.
The critical damage is for when you have the tension midway on the bar

Use as much fish in making your gear as possible: fish can be converted to animal fibre, which can then be converted into thread (and by extention, Cloth, Lining and Durable Cloth). For parts that you can't use fish for, prioritize on melee damage and/or critical hit damage.#
