However, as part of the experience for me was to be completely oblivious to the game and its mechanics, I wanted to wait for full release of below zero before playing it and not have parts "spoiled" because I already played the early access. I'm wondering, are there still many important changes planned up to release or is it mostly bug fixing now? Just to know if I can already get started or if there will be more features/story added by the time it releases

As said before. You can safely explore and make progress as far as the game goes. There most certainly won't be any bigger changed, it is just the final chapter that is missing. It is like watching an ongoing series that gets a new episode every week. Unlike you want to watch every episodes at once, you can watch it as far as it is revealed yet.
