Hi ! I am looking to buy a VPS for hosting a discord bot. I would want to do the yearly payment (8 % off) and pay all the total now (8.13 $ discount). However, I want to try out for 1 month before committing for a year, if I take the monthly option, will I be able to change back to yearly after the 1 month and keep the discounts ? Thank you

You can try 1 month, and buy new again after with 1 year up-front. 🙂
I don't think you can "upfront" after 1 month on current server.
