In that case you would want to use Connect with Separate Charge & Transfer to allow you (I assume) as the platform to split the charge between the two accounts.

I really like their idea but it seems I would have to do 2 charges for the restaurant customers card.

Basically my SAAS customers most requested feature is to have x% of sales deposit in one bank account and x% in another.

Okay so in that case you would collect the single charge in your POS system and split the transfers between the two accounts

How can I split the transfers between the two accounts? Is there any documentation I should follow?

Just be sure you create the Customer as an Express or Custom Stripe Account.
