ok so basically are you using checkout or are you creating the subscription yourself?
ATM we're creating it ourselves
Is there any way to achieve this using Stripe Customer Portal

One thing I've tried is to cancel the subscription at the end of the subscription so that you are prompted to renew, but I didn't see the upgrade option in the Portal anymore
So I have a way around this
You can basically create a subscription without any payment method with a trial_period_ends
and then you can ask your user to go to the Customer Portal before the trial ends to update the subscription and Update their Payment Methods
What happens once the trial period has ended? Which status does the subscription have then?

It depends really. The subscription wouldn't stop/end, it'd likely continue into a new billing cycle. The status would depend on whether there was a payment method attached to facilitate the invoice payment
