hi! usually, you as the merchant are the one defining that, you call our API to create Customer objects(https://stripe.com/docs/api/customers) (and then if you authenticate your end-users maybe you associate payments with existing Customer objects).

I've just seen that you give us some data for 'New customers' over a certain period of time and was just wondering how these customers were defined.

I'd imagine so! are you the developer who wrote the code at your company to interact with Stripe's API?
maybe you want our support team at https://support.stripe.com/?contact=true instead since they can look at your account and you can show them this exact data we apparently gave you and ask about it!
