Oh really !
No, I wasn’t part of any beta/preview for the Exchange Rates API. I only discovered it when I looked at the public Javadoc for stripe-java 22.7.0 (https://javadoc.io/static/com.stripe/stripe-java/22.7.0/com/stripe/model/ExchangeRate.html) and saw no mention of deprecation. That’s why I tried using it.

Yes, I think it was a Beta that is now deprecated. Probably stripe-java didn't update it yet.
