For the first issue, the functionality we want is that a user's subscription contains two products (one for $20 and one for $30). When creating the subscription, we want one of the products to be priced at $0, meaning the user only pays $20 at the time of subscription creation. However, upon renewal, the system should automatically charge the full amount of $20 + $30 = $50.

Because we are currently using subscriptions rather than subscription schedules, switching to subscription schedules would require significant changes on our end.

Yes you can also create a $20 coupon with duration set to once to give discount for the first invoice

If you turn off prorations, your customer will pay the new price in full (i.e., $30) in the next invoice. Is this something that you want to achieve?

No, what we want is to disable proration when refunding but enable proration when adding a new item that requires payment.
