Hey, so essentially the problem is that all of a sudden today (after more than six months of using the custom domain for payment links inside of Stripe), the DNS just stopped working, and now all of our payment links are broken.

So you might need to be clear on where you're seeing that two servers are attempting to use CHECKOUT as a sub domain

I thought that would work. If you go to the URL you gave me with the network inspector open, you can see the errors and get the explicit error details:

For some reason these CNAME's take 30 minutes+ to go though. The TXT record was instant
