You need to request an instant payout when needed and if :

and I don't understand who is "you" in the article. and who is stripe users? the platform owner or our customer?

No instant payout are at demand.

and does the instant payout deduct the money from our customer''s normal payout?

for example. the customer did 100$ sales and they are going to receive this next week. but at same time we did instant payout today.
will they receive money twice?

i see how it is done for stripe connect

but i am still afraid if it will keep track of balance
