my current idea was to create a subscription and use a payment link for the subscription as a product, however i found that it is not possible

You can create a payment link with a recurring price, thats no issue

yep, the problem arises from charging for the first 3 months in the first payment, and then not charging for 3 months and then doing monthly recurring after that

minimum commitment period of 3 months for a monthly recurring product
You can do this, but you either need to:
1/ use a 3-month recurring period for truly no-code/no-touch setup
2/ use an initial 3mo period then modify the subscription afterwards, either manually or using a subscription schedule
3/ Set up a one-time price for the initial 3mo commitment, include both this and the monthly in the items and use a free trial for the subscription
