I think I was confusing invoices and receipts
so a receipt is only a proof of the payment, right?
and the invoice contains the order (and it's a paid feature to generate the invoice)

if I add it, will only my business name will be shown in my checkout pages, and not my legal business name?

you can just use a separate Stripe account just for testing and put whatever information you want and see what happens
