Yes so they are two different Stripe connect accounts that I set the payment link up for
But they are created through one central account that is connected to all of them

Yeah, that's not how it works. In this scenario the links will take the branding settings of the connected accounts and not the platform ('central account'):
For destination charges with on_behalf_of and direct charges, payment links use the branding settings of the connected account. For destination charges without on_behalf_of, payment links use the branding settings of the platform account.
