You can build what you're describing though, likely using Elements for a large chunk of it but definitely requiring some custom work as well.

I already got the search and the selected customer is a Stripe.Customer. So I have every information about the customer, that I would need. For me it's just the thing about the address element and payment element..
Gotcha, what about them?
I am not that sure how to implement the expected behavior on one page. Like entering the existing details or creating a new customer
I'm still not really sure what you're looking for guidance on.
A Payment Element can be pre-populated using defaultValues:

You wouldn't use the Payment Element for returning customers, instead you would directly charge their already saved payment method. Similar to what we show here, but maybe adapated a bit depending on what exactly you're trying to do:

Creating Customer objects is done by making a request from your backend:
