Are there any restrictions from Stripe to me running the server side of the Terminal sdk on the android device as well as the client?
your secret key sk_xxxx should never be on a client device away from your server, so I don't think that's possible.
Is there a version of this quickstart that connects over USB rather than bluetooth?
not in the quickstart no but there is https://stripe.com/docs/terminal/payments/connect-reader?reader-type=usb
After a wisepad3 is connected over usb and turned on, will it stay on while it still has charge to run, or is there a forced shutdown after a certain time? (not ordered a physical unit yet)
I can't find the docs for it right now but it does do something like check for updates and restart at midnight-ish

Smart readers restart every day at midnight for PCI compliance, and disconnect from the POS app every morning.
Do you need to press physical buttons when reconnecting the readers in the morning, or if its connected over usb can that all be software based?
