Partial payment as in taking your payment in installments? That looks to still be in beta https://stripe.com/docs/invoicing/payment-plans

If you want to impliment invoicing in general we have this guide https://stripe.com/docs/invoicing/overview

There may also be a squarespace plugin, if you don't want to code this yourself. But Stripe does not make those plugins so I do not have a reccommendation of a specific one
