So before your boss visits your payment page have them go to https://stripe.com/docs/stripe-js/elements/payment-request-button in Safari and see if the Apple Pay button appears at the top of the page

If it does not, then they do not have a live card correctly set up in their Apple Pay wallet and thus the Apple Pay button won't appear.
If they do, then you likely have a domain registration issue.

Next step is to do what I said above... visit that URL in Safari and ensure that person sees the Apple Pay button appear then have them visit your site
