OK, from my end I can see that the calculated_statement_descriptor of ch_3NFVfkFWs2Lg6YD41He264TE is "LV FRESH", and I don't see a phone number there.
I don't know why your phone number is shown in your customer's statement and I'd suggest you to reach out to Stripe support https://support.stripe.com/contact/email and find out.
