Typically, if your users pay you outside of Stripe then you can mark the invoice as paid out of band

I’m trying to do that, and I cannot seem to be able. Where do I do that? Thank you so much.

When you open the invoice on the dashboard and click on more, you'd see the option to change invoice status

that's where you can mark it as paid

Can I set up automatic invoices to go out on a monthly basis?

What do you mean by "go out"? Do you mean send it to your users once the invoices have been finalized?

If I want to send the invoice to someone on the 15th of the month, is there a way to set up a reoccurring automated email from stripe?

Yes so I don’t have to think about it. And they are not on auto pay, because they pay me through Zelle. It’s their choice.

There are settings to enable sending upcoming renewal emails, however I don't think that allows you to set how many days prior this email would be sent

If you're working with a developer then you can configure the webhook event for upcoming renewal to be created 15 days prior to the renewal date & send your own emails.
