you cannot change the invoice number entirely. You can only make small changes such as defining the prefix according to the customer/account or should the numbering be sequential by customer/account

if you have a real connected account, you wouldn't be testing on it typically

if you create the connected account in livemode, then yes, you can access the connected account in live mode. You should be able to access it in test mode too though i believe
