I believe you can only self-serve default version changes if you intend to upgrade the API version. You would need to contact support and request that they change your default API version for you, otherwise you can set the API version on a per-request basis: https://stripe.com/docs/libraries/set-version

another question related to versioning: it looks like the online API documentation doesn't match the account version in some cases
in particular the payment intent object has the latest_charge parameter instead of the charges parameter that's on the older versions
Correct. Documentation will only show what's applicable to recent API versions and (in some cases) depcrecated/legacy APIs at the time of deprecation

I think that's just there to remind you what account you're signed into and what version you're using. It doesn't change what you can/can't see in the docs

welp they weren't able to do it so they needed to escalate. Is there a particular reason why you don't want people downgrading API versions?
