I am looking to see if theres a way that it can be broken down as a fee, and a separate line item showing billing fee

Are you using Invoices, Subscriptions? Or just PaymentIntents?

I believe just payments coming through from a 3rd party to begin.

We will use invoicing features at some point.

Also would like to know how we set up ACH available payment, ApplePay, and Affirm.

Correct.

Well with 1-time payments you just pass an amount (not multiple line items). But in your application you can display the amount breakdown however you want

If you're just using 1-time payments with PaymentIntents there isnt a concept of line items

You'd need to show the breakdown on your own in your application if you want to show the customer each portion of what you're charging them
