We really don't recommend updating the amount of a PaymentIntent
rather creating a new one
The problem with that is that creating a new one will refresh the payment element, erasing any data the user may have already entered
To be honest this very much sounds like a Google Pay integration issue on Stripe's side. Other options in the PaymentElement (like bank payments) update correctly to show the new amount
why would the amount change after the customer enters their payment info?

I've got several options on the payment page which can modify the total - like applying a discount code or adding optional extras.
