https://dashboard.stripe.com/settings/billing/automatic there's a Send emails about upcoming renewals option, you can turn it on so that Stripe will send emails about upcoming invoices.

There's no option to configure an email to be sent when a subscription is canceled. You'll need to listen to customer.subscription.deleted events and send out the emails by yourself.
