There's no real difference between any customer paying in GBP

Yep, the presentment currencies are not restricted by customer country but your Stripe account country: https://stripe.com/docs/currencies#presentment-currencies

That's possible yep, but nothing automated. You'd need to implement that yourself

e.g. some kind of UI element to select currency, which you then update on the Payment Intent
