I can't give you all the exactly details because it's a private company that I'm working with and I'm very inexperienced xD
But anyways, we can think this as a Notes app: you can purchase the right to create notes. You subscribe to "Notes" app and put the quantity of 10. Now you have the right to write 10 notes and so do you.
After some days or months you decide to don't have that amount of notes and downgrade the plan to have only 5 of them.. the app now should ask you which notes you want to cancel or delete before to actually update your newest request of downgrading the plan.
The last part "asking which notes you want to cancel" is the problem.. is it possible to do it with Stripe API?
That's something that your system/API/application would need to manage. We have no context of that, simply that the subscription has X number of seats
