Where are you trying to populate these fields, and what kind of test data do you mean?

Are you working with payment intents directly, or using Checkout or some other interface?

On test payments you should be able to send any billing and shipping info you want without affecting the test payment success.

Question 2 : There are about 56 columns or so exported into the Excel Report.

Is there a mapping of the column names to each JSON field in the same order ?
