I saw the message first then after a couple of seconds I see the button

Yes, I did
and I see the stripe account was in test mode so I switched off cos my website is live and we have traffic

I guess shopify allows Gpay only with shopify payments ? is that so ?

It seems like there is some restriction in Shopify side, take a look at this:
https://help.shopify.com/en/manual/payments/accelerated-checkouts/google-pay#:~:text=Only stores using Shopify Payments can use this feature. Refer to the list of supported countries to find out if Shopify Payments is available to you.
