#**Pasta e ceci (alla Fiorentina)**

INGREDIENTS (4 people)
- 320 gr Pipe Rigate 320 g (or other short pasta)
- a can of Precooked chickpeas
- 250 gr Tomato puree
- 100g pancetta
- 1 yellow onions
- 1 carrot
- stalk of celery
- 1 glass of White wine
- Fresh Rosemary
- Extra virgin olive oil to taste
- 1 pinch of fine salt
- Clean and finely chop the carrot, onion and celery
- Finely mince the fresh rosemary
- Heat a drizzle of oil in a saucepan, add the vegetables and let it fry for a few minutes, then add the pancetta
- Once the soffritto is browned, add the white wine and let the alcohol evaporate completely.
- At this point add the pre-cooked chickpeas
- and the tomato puree
- mix it and let it simmer for about 15 minutes (dilute it with the pasta cooking water or chicken broth if it becomes dry)
- Meanwhile, bring a pot of salted water to the boil and cook the pipe rigate until very al dente.
- Keep an eye on the sauce and dilute it with a ladle of the pasta cooking water or some chicken broth.
- Transfer about a third of the chickpeas into a bowl, then blend with an immersion blender to reduce them to a cream.
- Pour the chickpea cream back into the saucepan and mix everything together
- Drain the pasta and add it to the sauce
- Garnish with a few sprigs of rosemary and serve your pasta and chickpeas immediately!
It's an extremely comforting dish full of flavour. One of those that make you happy even in cold and gloomy days! No parmesan on this as well (but you can drizzle some extra virgin oil oil on top)
