But the soldering iron with the cable wouldn't stick to the ESC. It's on it but with a little pull the soldering iron comes off again

  • wipe your iron until it’s clean
  • apply a bit of solder to the tip, not much.
  • touch the large pad with the iron. Just one of them.
  • wait about 10-30 sec, whenever you see the solder start to wet the pad.
  • add a bit more solder, make sure it is wetting the pad
  • add the wire. This will cool the whole thing down, so your iron needs to be on there for a while. Try to heat both the pad and the wire at the same time
  • add more solder until it covers everything

Yeah that's what I tried I was watching a video of somebody soldering the same board the problem is that the pad does not really get wet with the soldering

That's why I tried that grease or what ever you call it in English
