It would need to be a heavy weapon. That has a reload time probably. The rocket launcher fires enough it would be impossible for one player to do much
If your weapon can be reliably shot down by guys eyeballing it you probably need a new weapon.

To be fair the rockets are a difficult target. And the tanks don't have scopes so reliability is definitely in question

i think that's in m/s could be vague gamey range units. most human projectiles are between 400 and 500
id place fighter at full afterburn at about 70 m/s i cant find the unit speed statistics just yet to give a solid answer. projectiles also inherit the momentum of the unit that fired it

So attack speed = the rockets move at 100 m/s and its not some arbitrary rate of fire stat?

Regarding the OP, so the idea in itself is not bad, though it should be light arms too, or medium calibres such as the Heavy Quad MG etc. But! It is not entirely fair because the Rocket Truck rockets travel incredibly slow for a rocket. 100m/s is much slower than almost any rocket in the real world, making it particularly easy to intercept. This tips the balance quite a lot. At present the Rocket Truck dishes out damage but is easy to eliminate, plus cannot engage close range so is vulnerable. This turns out to be quite fair. To that end I do believe making its rockets destructible would only subtract from its use.
The only time I see this as potentially viable is the Pulse Truck waves, those are flat, large and would like destroy/detonate the rockets on interception. Given the Pulse Truck is a niche unit, it presents an interesting counter option, but this then means teaching the AI to use it and ahhhhhhhh 😄
So to be fair, this will not happen, guaranteed, before 1.0 🙏
