I don't know if I have it on video but I clearly remember starting to break a rock mid despawn animation and it froze on that frame while I was mining. I ended up destroying it and didn't try to stop midway.

I was able to fix that issue just now, I just needed to reset the modulate alpha when hit during the despawn animation
