I'm using the UnRaid wiki, and I have successfully created the config folder and config file. However, when I try to start the docker container, the logs say Config Error: config not found at //config. I have ensured that the appdata path is correct and the config file is correctly placed. Any help is appreciated!

Kometa is looking for a file at /config/config.yml, and it can't find one.
Really the only thing that could be causing this is that there is no file there, which in the docker case typically means that you don't have the correct directory mapped into the container at /config
What is the full host path to config.yml, and what path do you have mapped into the container at /config?
If these two things were true:
the appdata path is correct and the config file is correctly placed
Then Kometa would be able to find it and this error would not appear.

You have the wrong folder mapped.
Inside the container, your config would be visible at config/config/config.yml
Your volume map needs to be:
/config <=> /mnt/user/appdata/Kometa/config
not
/config <=> /mnt/user/appdata/Kometa
