The collection is created, no custom poster though. Just the auto generated one. I'll grab the logs

First, given that the poster is in the asset directory you don't need to specify it with file_poster; the log shows that both the asset and the file are picked up.
The log also shows that Kometa is telling Plex to set the art without any errors, so if Plex isn't displaying it that's going to be entirely on the Plex side.

Thanks for the help. I think it must have been the .png file I was using. I tried a few other collections, they worked. Then I swapped the original .png that wasn't working with a totally different .jpg and it's working now
