You need to specify the single profile you want to use in each context.
There is an example of this on the radarr page in the wiki.

You can use as many as you want, but in any given context, Kometa is going to send a movie to Radarr with a given config, including the quality profile.
You can't specify more than one in some context, since Kometa then has no way to choose which one to use.
If you want to send the IMDB 250 to Radarr with a 1080p profile and Marvel movies to Radarr with a 4K profile you can certainly do that provided those are two different contexts ["libraries", collections, etc]
