I suspect what's happening is that Kometa cannot connect to something [plex, maybe] to get the information it needs to create the dynamic collections.

Yup. Just increased Plex DB cache size from default of 40MB. Thanks Mr Carrot!

Plex is also doing sonic analysis which is likely freezing things up.
