Hi all, sorry if this is a dumb question. Does PMM allow for anyway to remove the watched/unwatched flags and counts on the library? Could this be an overlay feature?

No. Overlays just changes the art on the item,. it can't remove UI elements that Plex lays over the art.
Basically, PMM can't do anything that Plex doesn't allow for already.
