Including the meta.log from the beginning is a huge help use !logs for more information.
As in the collections themselves or the items within each collection?
In either case, you need to specify the sort_title for the collections or the collection_order for the items within, this needs to be done per-file to the best of my knowledge
collections themselves
so I have collection 1, collection 2, collection 3... and I want them alphabetically
Set all the sort_titles to <<collection_name>>
So i revised the config file or movies.yml
Then they will all be alphabetical
that would need to be in a template
The PMM Defaults use a specific sort title too which you would need to consider
template being the movies.yml and tv shows.yml?

they arent alphabetical. Its whatever order the collections are in the movies.yml
There must be something setting the sort order
i.e. watchlist, top trending, romance, cool movies
Its that order in movies.yml.... and that order in plex
Go to one of the collections in Plex and check its sort title

By default, Sort Title is the same as Title. [well, in the case of "The Title", Plex sets it to "Title, The", IIRC]

The default metadata files set that value to put things in a particular order.
The metadata files you are using are undoubtedly doing the same.
