You can, but it isn't a simple process anymore and that's Google's fault. (btw, this only occurs when Google Play Games is installed).
If you just want to disconnect from Google Play Games, you can stop after completing step 2.
Open Google Play Store, tap your avatar, then tap the V next to your name. If the account you want to use is already signed in, go to step 2; if it's not, tap Add another account and sign in to the second account but don't switch to it. Add additional accounts as needed.
Make sure DML is closed, then unlink the current Google account by opening Google Play Games, go to Settings, scroll down to Your data and select Change account for games. Tap Change next to DML and select Sign out. Close GPG.
Open DML, go to Options > Connect to Social Network and you should now see a live button for Google. Tap and and select the account you want to link to. Close DML.
Back to GPG and go to Settings. This should show your main account as usual. Now tap the V next the email address to make sure the second account is also listed but do not select it, then tap anywhere outside the little window to close it. Scroll down to Your data and select Change account for games. Tap Change next to DML - you should see 2 options for accounts and a 3rd to ask each time (this is for multiple games on the same device). Select the account you want DML to use for a single change, select ask each time for 2+ accounts. Close GPG.
Open DML: for a single account change, go to Options > Connect to Social Network and verify that you're connected to the correct account. For multiple accounts, you will be asked which account you want to link to as the game is opening; you will need to close/reopen the game to switch to another account.
