That's because HYV doesn't know how to design encounters, so like half the enemies are just obnoxious to deal with. Kenki, Ruin Serpent, Wolflord, Daddy Dorito, etc. Enemies being untargetable or invulnerable for extended periods of time are lazy. It's even worse when they dash away like Kenki because so few characters have gapclosers like Rosaria.
