With the extreme focus on hands/fingers and things being extremely interactable, I cannot think of any weapon that is more dependent on physics than a butterfly knife, if correctly implemented it would probably feel amazing and be a very enticing thing to experiment with, and of course make using it incorrectly punish you with some small damage to your hands, or large damage if you drop it and it lands blade first into your thigh.

you would need animations for this. VR doesn't allow nearly the needed amount of fine control for butterlfy knifes
Not sure if it is relevant, but H3VR has a butterfly knife that is physics based, the only thing is you don't have fingers so there is nothing on your for it to hit, however the knife does react entirely with the environment(and guns if you poke it with them), so I believe you might be incorrect
H3VR has far finer controls than a massive blob of meat with fingers attached
A butterfly knife would flop all over the place
it entirely depends how much effort is put into making it work realistically, it is probably possible, but would need a lot of tweaking and probably some kind of added attraction to the hand so it doesn't go flying
