I will give you that outside experience and emotions influence decisions and AI doesn't have that, but you do kind of calculate the next word. It's the idea of idiomatic expressions/collocations. You see that a word is most commonly paired with a particular word or syntactic structure through a lot of exposure to the language, and you start to use that data when formulating your sentences. So you never say 'black cool dog' but say 'cool black dog' because statistically it's the most common (if you generalise 'black' to '[colour]' and 'cool' to '[opinion]'). It's not mathematical in the sense that you're calculating probabilities actively, but these patterns aren't just random; they're based on data, which can be calculated. I think AI is just simulating that, but probably with too little heed to the greater context

I'm not very in favour of using AI, don't misunderstand. I avoid it as much as I can because I know that overuse would lead to a devolution of my critical thinking abilities, but I do think there is an argument to be made for why it's not immoral

The connexions are based on data and such, but it's more immediate than a calculation. Then that would sometimes simulate the immediate 'input to output' which you mention ('it goes "it's like that because it is"' as you said), instead of the 'input to processing based on data to output'.
