select the text and press ctrl E to make the text a inline code, like this
the 2nd is the codeblock, it should work, I use it quite a lot and it works fine both on web and desktop app
also if you have the markdown shortucs enabled you can use the markdown syntax to make codeblocks
Sorry if this is a basic question, but when I'm using something like word/google doc, if I press ctrl+i, everything that follows is in italics until I press ctrl+i again.

No, the code block toggle just creates a code block
