I like this kind of chibi and comedy. Reminds me of Cuticle Tantei. I don't know why I loved that show so much (ended up reading the manga and it had actually interesting ideas too... Mochi (the author) did another manga called The Witch Servant which is also interesting. I didn't expect something japanese to try to explore gender like that, probably clumsy at times I'm not too knowledgeable about that, but interesting nonetheless)

the anniversary project was based on the three main routes (fate, ubw, heavens feel) which they made fgo gacha (fate), tv series (ubw), movie series (hf)

fate route doesn't have its own anime but the heavens feel movies don't do a lot of exposition and are made quite clearly for existing fans who have read the novels etc so best 'anime' method of getting an understanding for it is the ubw series
and fate/zero is a prequel so best experienced once you've seen the others and have that context

but going with ubw -> hf -> zero is a chad option 
zero novel was written after stay night so that's kinda the intended order
they asked for chronological so

So it's kinda more related to the kind of humor you like. Not a matter of quality itself. I'd watch Nichijou like a sunday cartoon. It can be relatable tho (cf Yuko at a coffee shoo etc...) but it plays on a large variety of stuff without really developing its characters (cause it doesn't need to, it doesn't intend to tell a story)

Nichijou kinda seems more like a slap in the face to slapstick as there more to it than just some quirky visual gag
Azumanga and nichibros and both slice of life too but they develop enough of a story to add another layer to the jokes as well

Nichijou is the very definition of slapstick tho. As for the additional layer, I think it's still there. As the show still reuses characters and previous situations to build something. I also think most jokes aren't free, since they're straight up puns

It has a good balance of elements, and has a large variety of crazy settings. Now it's super uneven and the more you progress and the more hit or miss it feels. But at the end of the day it's rather rich. It's also interesting it's the anime that kinda saved Pierrot, which was getting rather unpopular for the quality of its adaptations

I don't think combat choregraphy has to relate to combat knowledge. They're 2 different things. Ofc if a show has both it's supposed to be more believable (for who tho? Most of the audience wouldn't notice. And tbh while martial arts films look super cool most moves shown are so impractical that they could be deemed fantasy). But in a fantasy setting, with characters that have superhuman abilities, it often boils up to looking cool, and on that front I think RWBY managed well (at least while Oum was around)
I feel like having a grounding in realistic combat helps a bit
As for the rest of the show, S1 & S2 were mostly lighthearted. I don't think Oum wanted to do something too deep or heavy. But probably unsure to be able to keep its spirit intact after his disparition, they went for a darker S3, with more emphasis on lore ane story. Which worked for S3, but not for the rest. Even if I guess there's decent payoff for faithful fans in the end

Even format was all over the place. It's only with S3 it started to have fixed duration (around 15 minutes) and tried to be more ordered

Now I definitely feel this way for some shows. Afro Samurai is something I could have enjoyed better if it had no plot for instance
i mean people are free to try what they want to im not saying that but
its open for critique if they do and objectively it would be better if it wasn't there
i dont know what software he was using for rwby but idk how he managed to make it look worse than something like mikumikudance which was freely available..
But RWBY was mostly harmless in what it tried to do at first. Comedy and exposition don't ruin the show, at worst you'll have a poker face if it's not your cup of tea. You won't actively roll your eyes cause "plot so bad". There's very little of that
well BRS got dragged down by trying to have a plot with the tv series
