Since that's pretty much internal data that only MAPPA would know, barring some big internal leak or behind-the-scenes interview, most likely no.
Production can start several months before airing, or even several years (especially the case in larger companies, where multiple animes are usually scheduled years in advance).
For an example, Madoka Magica's production began in 2008, but the anime wasn't announced until Fall 2010, and wasn't released until Winter 2011
They finished their production in early 2010. Meanwhile, some studios will just straight up keep animating until literally airing day lol

The animation and art is pretty good
And the plot is somewhat interesting
But its the amount of hype it gets from its fan base pumping up the show to crazy levels that makes me more critical of the show
Its not quite like say AoT levels of fan base hype, but when people were going nuts about episode one and I ended up not feeling the hype it makes me sad
Cause then everyone says episode 12 is a 10/10 and it just doesn't live up to that
For me. I don't really like the characters that much
Odd Taxi and Vivy had really compelling characters and storylines
And while Fumetsu did have a somewhat interesting storyline recently, I still had this feeling of unattachment to it because of how the plot works

Honestly, as someone who really liked the Fumetsu manga, I dont know how well the main series translates into anime. It's a bit of a tough series to adapt tonally.
(That being said, despite whatever score I give the anime as a whole, the 1st episode is still a flawless recreation of the opening chapter, and I'd recommend the episode even as just its own short story)

Though the arcs to where he resides, develop, and conflicts ensuing are pretty long, whereas in other series like Mushishi and the first half of Casshern Sins, each episode is typically a separate conflict the MC encounters and so on
I'm pretty sure Kino no Tabi and Dororo are wandering concepts and well praised too, but I still have yet to watch both. Definitely gonna start with the latter first, as much as I'm eyeing on the former
Main takeaway is that Fumetsu heavily builds upon their arcs more than other wandering stories. Wandering stories are usually episodic, this one is... episodically periodic?

Yeah, Fumestu unfortunately is more of a multi arc buildup. A lot harder to make work on a season by season basis.
The payoff in the manga is pretty nice even if I think the manga has somewhat overstayed its welcome past a perfectly fine ending, but it took quite a while to get there

Basically there's an audio series that was released alongside each episode that's (in-universe) supposed to be a podcast by Nagashima (the giraffe/rakuga fan letter writer).
Sadly, the official youtube version doesnt have subtitles, but theres a fan subtitled version that goes up to episode 10, and the last 3 have transcripts on the Odd Taxi wiki
(The show also makes use of the pen that shows up a lot in the series, which the audio series reveals is wiretapped, so we get to hear some conversations from characters in the show too)
Long story short: ||The girl at the end has already done some fucked up things, even more than what was shown in the show.||
Also on a related note, ||the Kangaroo girl that ran the bar is most likely either dead or badly injured. And while the anime was a bit ambiguous about the ending, the audio drama doesn't leave much doubt about if she knows he's the guy||

Well, as far as manga go, I can make pretty strong recommendations for ReLIFE, The World of Machida-Kun, The World God Only Knows, Pluto and Something About Us 👀
First one being a coming of age type self-discovery story, the second basically being "Autism, the anime", third being a romance visual novel pro forced to romance girls to remove the evil spirits in their hearts (using his romance game knowledge to do so), fourth being gritty detective sci-fi in the world of Astro Boy, and the last being the most realistic romance story ive seen.
Dunno if any of those are your cup of tea, but I very much enjoyed all of them

He pretty much just goes undercover into the same gang to get close to, and assassinate, the same people who killed his family. The way it ended and the sacrifices that were made were kinda dumb imo. Sakamichi no Apollon (aka Kids On The Slope) got that jazz clout and piano & drummer synergy so that was an easy 10/10 for me
Zankyou no Terror would've been a 10 if the last few episodes weren't rushed but the message was still executed well af
And MAPPA's modern take on Banana Fish was pretty cool and collected, also depicting the brutal atmosphere at times proper
