Depends on what you think youll like
Imo, for a first anime, you want something that they will most likely at least "like". Ideally, you would then use what they like about those shows to make deeper/better/more niche recommendations of shows for them.
Personally, if it's a new person, I'd say starting with stuff with the broadest appeal would be best, then narrowing it down later based on what part of those shows they liked.
Example starter list:
Love is War: Broad appeal rom com that's generally regarded as a well done show, and can help them see what sort of comedy characters they like.
One Punch Man: Another high-budget series with lots of stopping points, and broad appeal. Can help them get a feel for tropes in the action genre as well.
Bocchi the Rock: Good meme-y introduction to the music genre, with lots of modern pop culture references non-anime fans can catch on.
Beastars: Good intro into mystery thrillers, and overall a good story.
My Hero Academia: First two seasons are legit good, and it's a good story-driven intro into tropes of the superpower genre.
Gundam: The Witch from Mercury: In addition to being new enough to not suffer from dated characters and visuals, this is just a legit good starting point to see if Mecha's their thing.
No Game No Life: Fun and visually appealing enough that even if they're lost, they can still enjoy what's going on. Also appeals to the gamer side of things.
Cyberpunk Edgerunners: Good branching off point into sci-fi esque animes like Ghost in the Shell and Psycho Pass.

I feel like this is a you issue personally. If you feel like there's such a influx of "op mc" stories than just stop reading/watching so many of them? I personally just enjoy that type of story a lot so even if I'm watching 3-4 of them a season as long as they aren't egregiously terrible then I don't see a problem with them and I don't think Eminence in Shadow falls anywhere close to the egregiously terrible part of the spectrum.

This is part of the reason Gundam Seed gets shit on a lot. Almost any fight scene where they just need to fill runtime they'll just use the exact same bit of animation just with whatever suits are fighting and whatever backdrop they're in. It's literally the exact same thing for all 100 episodes (Seed > Seed Destiny). Everytime it comes up I laugh a little because it's just so funny to me.
Like I love Seed's designs but if we wanna to talk about shows with poor production quality the Seed is definitely a contenter.
It's not all bad but where it is bad is so glaring that it's hard to overlook.
I kinda want them to remake that bit of animation for the new movie just for the meme.
I would agree only with Edgerunners and One Punch Man. Maybe also the new Gundam. Others are already very specific. Bocchi and Love is War has very specific sort of humor and a lot of jokes revolve around japanese culture.

Is it the best sci fi film ever made? Imo nah (tho some would disagree). But it has a very broad appeal, so lots of people will at least "like" it, even if they don't love it. And from there, you can figure out what parts they liked and go deeper down the genre rabbit hole

For romantic anime I would probably suggest Bakuman. It has the simplest romantic premise in the world and also literally explains how manga and anime work
Romance and nothing else is a hard sell for a lot of people though, so that narrows down your target audience. I dropped Bakuman myself at about Episode 2/3ish cause of that
Stuff that does multiple things at once casts a broader net to have at least one or two things a person will like
Well, Bakuman grips with the ages old premise with a twist and then it casts the widest net possible with all the different genres they try out during the story
it's a bit slower paced, yes. But on the other hand all the tropes used are solid and not overboard
I wouldn't want to overload someone's brain when they watch anime lmao (and that's what might happen with Love is War)
so while mindgames is my favorite subgenre, I wouldn't suggest watching mindgames anime to a first timer. So NGNL, Love is War, Death Note etc are out

From my personal experience, people just get distracted by all new stuff that is happening in anime compared to usual TV shows, so they don't have time to pay attention to mindgames and what is happening there

honestly, I still remember how I was overwhelmed with Full Metal Alchemist humor and style when I started watching anime. Today I would think nothing about types of jokes there and the chibis they used.
But for me at that time it was literally a cultural shock. (even though I was exposed to anime via Pokemon and Sailor Moon before that)

should have joined some martial arts club. The first thing they teach you is how to fall. Literally. We spent first 3 training sessions just on that, and we kept training falling the first half of a year. Don't know if that helped, but I never broke a bone. And I literally spent most of my time outdoors

I think parkour would assume that you have time to prepare for the fall. Martial arts training is good because sometimes you need to know how to protect yourself after an unexpected fall

Chap 1-72 (what the anime covered): godawful trash that's basically an H film with more drama
Chap 72-110ish: Soap opera drama
Chap 120-160: dumb, but better-ish?
Chap 160-268: Actually really good. I liked this segment a lot since it veered pretty hard away from the trashy segments.
Chapters 269-276: I still to this day do not understand what led the author to do to this series's ending what she did. Literally the worst destruction of everything a series stood for in an ending that I've read, ever, of all time.

Once you start getting into Saint Class shenanigans things get wacky
erm, isn't rock/earth magic like his second most used type of magic? Like his nickname Doronuma basically Earth+Water
He actually uses Earth Magic the most depsite being most proficient in Water.
Earth magic is just way more versatile in most combat scenarios and his incantationless casting allowing him to cast combo spells with ease (e.g. Quagmire, a mixture of Earth and Water magic and also his namesake).
The whole post-Orsted bit tbh is him taking his vast mana pool (which he's had all the way back when he first summoned the storm) and figuring out how to use it efficiently/tactically.
Sure, grand storms are flashy, but in a practical fight, being able to creatively/quickly deploy spells is what he needs to have a chance the next time he's up for a rematch
I think comparing the ||Dragon|| fight in S2 to the ||Serpent|| fight at the end of S1 Cour 1 is a good way to showcase his individual growth.

Also my friend recently rebought most of his DLC on PC since he transitioned from Console gaming to PC gaming and the main DLC don't transfer. It cost him like $75 for all the modern DLC excluding dungeons and seasons which do transfer over. Granted this was on a really good sale but still it's not anywhere close to $500.

I was curious so I did the math. If you had bought all the Destiny Franchise (both games and all DLC) at Pre-Order/Release full price using the most cost efficient bundles it would have cost you a grand total of $759.88 before tax.
This includes everything including The Final Shape which comes out in February
