I've been playing at a slow pace for around 20hrs and chose rogue-thief who has less fall damage, which is nice but the "reduces footsteps sound" doesn't seem useful at all since mobs still see you with their back towards the player from miles away when crouching. I recently played the other Mediaval MC modpack too, where the mobs had a "!" sign if they see you, and crouching in the darkness seemed to make a noticeable difference. Also, it also looked like attacking before they see you dealt bonus damage, so I was aiming to play like Assassin's Creed or whatever here, but seems to be useless.
In regards to the wizard classes being jacks of all trades, I haven't played with those so I don't know, but I like the idea that they have a massive (for what I've seen when making my character) bonus to magic damage at the cost of having much less HP, so yeah they can for sure deal the same or close enough damage to the other melee classes, but they'll have a much harder time lasting in the fight. I might be mistaken here, maybe later on the health difference isn't really noticeble, like 14 vs 19 hearts for instance isn't close to 5 vs 10 hears.
Lastly, and this is an entirely other topic, I like the idea of not healing naturally, makes making defensive potions really attractive, and the hunger/thrist bars are just to be inconveniences; however, the hunger bar is absolutely shadowed by the thirst bar, since it depletes really fast in comparison to the hunger bar, also there are very few reliable water sources, just purified water. I really enjoy being "the cook" when playing this kind of modpacks with my friends, making the most OP 14+ saturation meals, but it isn't at all rewarding here. I've been eating sweet berries just because they refill little hunger an little water, so that I can eat more of it and drink less water/juice (made from water and the same berries, which is nice). It would be awesome if having full hunger gived some buffs and depleted faster. +
- I would try to take some inspiration from the newer zelda games and make the food useful to not just heal and grant some effects, and maybe keep some healing properties on some of this just outside of combat or with some cooldown with an status effect like "full" or whatever, since without magic and the lack of string/wool I'm surviving without bandages and find myself constantly sleeping even using /time set night comand. I'm not sure if the "comfort" status does something like this like in other modpacks.
Finally, I don't see the point of having create here.

How are you finding melee combat as a rogue-thief? How's your damage?
I'm with you there in that hearts probably don't mean much later on.
The combat seems fine for now, I have a dual weapon sword/hammer which is fine and extremelly cheap (iron sword + 6 stone)
I just found it on the JEI and stuck with it xd.
But it isn't much different of being class-less
I'm thinking of re-rolling to Paladin to try that instead & see what it's like as I'm really dissapointed with Tempest Cleric & not getting any sort of healing magics.
But the rogue gives bonus ranged damage which i'm not giving use to right now

Yeah I encourage you to re-roll as much as you like to find other playstyles and finding a better way to balance all
I'll stick to thief for a while tho
Also maybe the charisma saved me cause I opened a chest in front of the wizard piglin (I assume is common since I've found 3 in around a 500 blocks radius) and he didn't killed me xd.
