The sniffer is an ancient mob that was around whenever the ocean ruins were first built (a long time ago)

The ancient builders saved this one specific mob underwater for years in a warm ocean. If the egg could survive underwater for thousands of years in sand it's very unlikely the egg would change just because of the foliage around it.

Okay, I admit that it's a bit dissonant with the canon of Minecraft. Looking at it that way, it could be that each Sniffer has adapted to the biome once the egg has hatched. Other Minecraft mobs transform depending on their environment, such as the Drowned, the Bogged or the Husk. Idk the skin variations looks SICK in my opinion.
