ok sooo best debris mining method I've found is definitely vein mining in straight lines (as opposed to carving out entire chunks 360 degrees)

due to the way debris spawns, it's more efficient on your time, pickaxe durability and sanity to just mine straight

aim for the 3rd block up from your feet and the elevation of the vein mine will stay level with you

this is a common issue with rubidium, I personally just juggle back to optifine when I need to explore those kinds of biomes (jungly overgrown stone ones)
