Already used chmod +x ./run.sh so it launches the server fine

What do you mean by "permanent"? There is a mod that adds seasons to all biomes and the winter can last quite a long time.

You could remove the seasons mod I think if you'd like it to go back to more vanilla behavior for where snow falls

There are also some spawners in certain dungeons that are good for this. In the asylum there is a husk spawner that makes husks with 2 hearts that drop over 10 xp each. If set up near your base you could probably make a pretty nice XP farm with them.

There is a time limit, but its 48,000 ticks (about 40minutes) and even after it expires, alive pillagers will remain. What you describe sounds like a bug in Minecraft. There was one a while ago where that would happen in Tundra biomes...
